Jalapeno Peppers
Specialty peppers such as jalapenos are rich in vitamin A and C, and also have a compound called capsaicin, which is what makes peppers spicy. This compound has been linked to promoting blood flow and preventing obesity.
Purchasing, Storing and Serving
The best way to store fresh jalapenos is in a plastic bag in the vegetable crisper drawer in your fridge. Use them within a week. To freeze, slice or chop and place in a freezer safe bag or airtight container. Jalapenos will last up to 10-12 months in freezer.
Jalapenos are used a variety of different ways. To remove the “heat” from jalapenos, remove the seeds and white stems on inside of pepper. Slice and eat raw as a topping, or use in various dressing, marinades, and even pickles.
