Mini Sweet Peppers
Mini sweet peppers are very high in vitamin C, but also pack many other vitamins and minerals! They are a great source of beta carotene, vitamin E, Vitamin B6 and folate. In addition, they are naturally very low in saturated fat, cholesterol and sodium and are high in dietary fiber.
When selecting your mini sweet peppers, be sure to pick brightly colored peppers with tight skin. Avoid and shriveled, dull or pitting.
